6 large eggs
1 tsp baking powder
1/2 red onion, peeled, 1/4-inch dice (about 1/3 cup)
4 (about 1 lb total) butter potatoes, peeled & shredded
1/2 cup Manischewitz Matzo Meal
1 tsp salt
1/2 tsp black pepper
2/3 cup Extra Virgin Olive Oil
Preheat oven to 350 degrees.
Add eggs to bowl; whisk.
Add baking powder; whisk until well-combined.
Combine onion, potato and matzo meal in another bowl.
Add egg mixture to potato-onion mixture; stir to combine, and season with salt and pepper.
Add oil to large pan on MED-HIGH.
Scoop potato mixture by rounded half-cup measures into pan. Flatten with spatula to make pancakes.
Cook pancakes about 3 min until each side is browned. Repeat process with remaining mixture.
Transfer pancakes to baking sheet; bake on center rack of oven 10 min.
Transfer to paper towel or parchment paper-lined baking sheet to absorb excess oil.
Chef Tips: *Shred potatoes in food processor. *Can be made a day ahead and microwaved to reheat. *Great served with applesauce, crème fraiche or Greek yogurt and garnished with minced chives.
